Gypsy toast
This is a lovely savoury dish for breakfast and it’s quick and easy to make. It’s a great way to use up stale bread and any bacon or mushrooms that you may have in the fridge. A tasty start to the day, especially when served with a tangy homemade BBQ sau
Ingredients: (serves 1)
Toast:
- 1 egg beaten
- 40ml milk, any
- 1 slice stale bread
- Oil or butter for frying
- Bacon (optional)
- Mushrooms (optional)
BBQ sauce:
- 2 tbsp soy sauce
- 1 tbsp tomato puree
- ½ tbsp brown sugar (or use whatever sugar you have or honey)
- ½ tbsp lime or lemon juice or 1 tablespoon vinegar (not malt)
- 1 clove garlic, crushed
- Seasoning
Method:
- For the toast whisk together the beaten egg and milk.
- Dip the bread into the egg and milk mixture.
- If using bacon cook that in the dry pan first until golden and use the excess bacon fat to cook the French toast.
- If using mushrooms cut into small chunks, cook in a pan with a dessert spoon of oil and a good dash of salt and pepper.
- Fry the bread in a non-stick pan in a little vegetable oil or butter until golden on both sides.
- To make the BBQ sauce simply mix all the ingredients together and bring to a gentle simmer for 2 to 3 minutes and it is ready to use as a sauce, marinade or dip. Season to taste.
